Grain-Free Pesach Granola

It’s perfect for breakfast with yogurt and fruit, and perfect on-the-go too. This Pesach Granola is that wholesome crunch you’re craving.

BCP runs a content chat called…New Content (super original name!) During and after every occasion/Yom Tov we discuss what recipes we tried, ideas we are missing, hacks we used. The following year we review the year before and that’s pretty much our base of all the posts we post. Last year Pesach I wrote on a BCP chat, “Did anyone see a good Pesach granola recipe?” I received a lot of responses and links.  Some of them had matzah farfel, others used quinoa. However none of those ingredients are ingredients my family uses for Pesach. 

During this year’s content chat, we discussed how popular our Nut Free Granola was. Our editor Victoria also said she thinks we should definitely use almond flour in the base of our granola like in the Best Pesach Apple Crumble. Using those ideas and recipes as inspiration, I pretty much had an idea of what I was going to put into my granola. 

However, as I was putting it together, Esti, our photographer, mentioned that she thinks it needs something to bind it together, like an egg white (Brilliant Esti! You should write more recipes!) and so, combining everyone’s suggestions (who said too many cooks spoil the soup?) the most addictive Pesach granola (perfect for everyone and definitely for those who use limited ingredients) was born!

Combine all the ingredients on a baking sheet. 

Mix to form crumbs. BTW, Esti also suggested adding coconut flakes to the granola. However, since I was writing and eating the recipe and I do not like coconut, that suggestion wasn’t incorporated. However if you do like coconut and add it to your granola leave a comment and she will very pleased!

Bake until nice and golden brown.

You’ll see it has the perfect crunch.

Keep it in the freezer in a Ziploc…

Or leave it in an airtight container on the counter!

Serve this granola with yogurt, fruit, over ice cream, or just as a snack as-is!

Additional subs if needed:

Don’t use pecans? Replace it with more almonds or walnuts.

Grain Free Pesach Granola

Ingredients

  • 1 cup almond flour
  • ½ cup chopped almonds (whole raw almonds chopped)
  • ¼ cup chopped pecans
  • ¼ cup chopped walnuts
  • ½ cup chocolate chips or chopped chocolate 
  • 3 tbsp sugar
  • 1 tbsp vanilla sugar
  • 2 tbsp honey
  • 2 tbsp oil
  • 1 egg white 

Instructions

  • Preheat oven to 350°F.
  • On a lined baking sheet, place almond flour, chopped nuts, chocolate, and sugars. Mix well.
  • Drizzle in honey, oil, and egg white. Toss well to coat.
  • Bake for 13-15 minutes, until golden brown. Let cool completely.
  • Store in a container at room temperature or freeze.
